Get ready for the easiest, healthiest pancakes in the world! You can customise these little beauties by adding in a few extras, like chocolate chips or chopped nuts. Add some delicious yoghurt or maple syrup as a topping, or make minis for the lunchbox to enjoy later! The best thing about these is that they are whipped up in the blender. I use our Ninja and they are ready in minutes with minimal mess.
INGREDIENTS:
2 medium ripe bananas
2 eggs
1/2c unsweetened oat milk
1t vanilla extract
1 & 1/2c rolled oats
2t baking powder
1/2t ground cinnamon
1/4t salt
Olive oil for cooking
METHOD:
Throw all ingredients into the blender and blend until completely smooth. Let the batter sit in the blender while you heat the pan. Lightly coat the pan with oil and once it is hot, add 1/3c of the batter for each pancake and cook for 2-4mins until pancakes slightly puff up and you see a few bubbles. Flip! Then enjoy with whatever toppings you love most.
